It keeps for ages, on one of my digs we once found a jar about as high as my hip, full of honey, and though much had crystallised it was still perfectly edible - not that we ate any, of course, germ theory would suggest that while the contents are stable it would be unwise to consume it after it's been sitting there for thousands of years - but hypothetically, one could!
[For a long, quiet pause thereafter Evelyn realises that she hasn't stopped talking, and that she should pursue the primary purpose of her transmission.]
